The other night, Morgan made us his delicious Lemon Basil Pesto Chicken Salad for dinner. He brought home a package of fresh basil, and only used about half of it for the salad. Anytime we have extra fresh herbs I struggle to find a purpose for them before they go bad. Morgan had the genius idea to infuse the basil in some vodka though, as he knows how much I love a great bloody mary.
This can be done with any fresh herbs, don’t be afraid to experiment!
Homemade Basil Vodka
yield: 750 mL
handful of fresh basil
750 mL bottle of vodka
Grab a 32 oz. canning jar, add the basil and the vodka. Shake it, then store in a cool, dry place for a few days. Now use it in your favorite cocktails!
